  • 10-12 ounces cauliflower florets (about 3 cups, you can use frozen if you wish)
  • 1 tablespoon minced garlic
  • ¼ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons butter (for optional step)
  • 1 cup diced onion (for optional step)
  • 8 ounces pepper jack cheese (shredded)
  • ¼ cup Parmesan cheese (plus a little extra for garnish, if desired)
  • 1 tablespoon chopped jalapeno pepper (jarred slices)
  • ¼ cup diced tomato (you can used canned, just drain it thoroughly)
  • Chopped cilantro for garnish (if desired)

Instructions

 

  • Place the cauliflower florets in a microwaveable bowl, add about 2 tablespoons water, cover with plastic wrap (leaving a little space uncovered for steam to vent), and microwave 4-5 minutes until the cauliflower is very tender. (May need more time if you are starting with frozen florets.)

  • Drain the cauliflower and transfer to a food processor or blender (be careful, it will be very hot!). Add the garlic, milk, salt, and pepper. Process until well-combined and completely smooth.

  • OPTIONAL STEP (this can be skipped if you are in a hurry or don’t have an onion): In a large skillet, melt the butter, then add the onion and cook until translucent. You can use frozen diced onion if you like. Then add the rest of the ingredients in the next step and continue.

  • Place the cauliflower mixture in a large skillet, then add the pepper jack cheese, Parmesan cheese, jalapeno pepper, and tomato. Heat and stir until the cheeses are melted and the mixture is hot and bubbly.

  • Garnish with additional tomato, cilantro, and a sprinkling of Parmesan cheese.

  • Fresh cauliflower is always best for flavor and texture, but frozen florets can absolutely be used in a pinch! Just ensure they are thoroughly cooked until very tender.
  • No fresh garlic on hand? No problem! You can easily substitute with jarred minced garlic for convenience.
  • The quality and type of cheese you choose truly makes a difference in the final taste! I highly recommend a nice, zesty pepper jack. Some pepper jack varieties can be quite mild, and if you use those, the resulting dip might not be as flavorful. Look for one with a good kick!
  • If you opt to use canned diced tomato instead of fresh, remember to drain it very well before adding it to the dip to prevent excess moisture.
