Essential Ingredient Notes & Smart Substitutions
Creating these delightful chicken skewers requires a few key ingredients, but don’t be afraid to experiment with substitutions to tailor the recipe to your taste or what you have on hand. Here’s a closer look at what makes this recipe shine:
- Chicken: The star of our show! For this sweet and smoky chicken recipe, you have a few excellent options for chicken cuts. My top two favorites are either boneless, skinless chicken breasts or chicken thighs. Both cut easily into 1-2 inch cubes, which are perfect for threading onto skewers and ensure even cooking. Chicken breasts offer a leaner option, while thighs provide a juicier, more tender result due to their higher fat content. If you’re looking to branch out, the versatile marinade also works wonderfully with other chicken parts like whole chicken pieces, wings, or drumsticks. Just adjust cooking times accordingly if you’re not cubing the chicken.
- Spices: The magic truly happens with our simple yet potent spice blend. I use a foundational combination of sea salt, ground black pepper, and ground chipotle seasoning. Chipotle powder is key here, imparting that signature smoky heat without being overwhelmingly spicy. For those who crave an extra kick, a pinch of cayenne pepper or red pepper flakes can be added to the marinade. If you want to deepen the flavor profile even further, consider incorporating a teaspoon of garlic powder for an aromatic punch and an additional half teaspoon of smoked paprika, which enhances the existing smoky notes and adds a rich, vibrant color.
- Honey: This natural sweetener provides the “sweet” in our sweet and smoky profile, helping to create a beautiful caramelized crust on the chicken as it grills. Any good quality honey will work.
- Tomato Paste: Often overlooked, tomato paste adds a depth of umami and a subtle tang to the marinade, complementing the smoky chipotle and sweet honey perfectly.
- Apple Cider Vinegar: A touch of apple cider vinegar provides a bright acidity that balances the sweetness and smoke. It also helps tenderize the chicken.
- Olive Oil: Acts as the base for our marinade, helping to emulsify the ingredients and coat the chicken evenly. It also contributes to moisture and prevents sticking during grilling.
- Lime Juice: Fresh lime juice adds a zesty, bright finish to the chicken, cutting through the richness and enhancing all the other flavors. If you’re marinating overnight, remember to add this just before grilling to prevent the acid from “cooking” the chicken too much (see Pro Tips for more details).
Mastering Your Skewers: Instructions
Follow these simple steps to create perfectly grilled, flavorful Chipotle Honey Chicken Skewers every time:
- Prepare the Chicken: Begin by taking your chicken breasts (or thighs) and chopping them into uniform 1 to 2-inch cubes. Consistency in size is important here to ensure all pieces cook evenly. Set the cubed chicken aside in a large mixing bowl.
- Whip Up the Marinade: In a separate, medium-sized bowl, combine all the remaining marinade ingredients: honey, tomato paste, apple cider vinegar, olive oil, lime juice, dried chipotle powder, smoked paprika, cayenne pepper (if using), sea salt, and ground black pepper. Stir vigorously until all ingredients are well combined and form a smooth, vibrant marinade.
- Marinate for Flavor: Pour the prepared marinade over the cubed chicken in the large bowl. Using a spatula or your hands, toss the chicken thoroughly until every single piece is completely coated. Cover the bowl tightly with plastic wrap or a lid and let it marinate in the refrigerator for at least 20 minutes. For deeper flavor infusion, aim for 2-4 hours, or even overnight (see Pro Tips regarding lime juice for overnight marinating).
- Thread the Skewers: Once your chicken is beautifully marinated, lightly spray your metal skewers with cooking spray to prevent sticking. Carefully thread the chicken cubes onto the skewers, one at a time. Be sure not to pack them too tightly; leave a little space between each piece to allow for even cooking and charring. Continue until all the chicken is on skewers.
- Grill to Perfection: Prepare your outdoor grill by spraying the grates with cooking spray and preheating it to medium-high heat. You’re aiming for a temperature of at least 375 degrees F (190°C), ideally closer to 400-450°F (200-230°C), for that perfect sear. Once the grill is hot, carefully place the chicken kabobs onto the hot grates. Cook for approximately 3 minutes per side, rotating until all sides are nicely charred and the chicken is cooked through. The internal temperature should register 165 degrees F (74°C) when checked with an instant-read thermometer.
- Serve and Enjoy: Once cooked, remove the chicken skewers from the grill and place them on a clean plate or cookie sheet. Allow them to rest for 5 minutes (this helps the juices redistribute, resulting in more tender chicken). Carefully remove the chicken from the skewers and serve warm. For an extra burst of freshness, sprinkle with additional lime juice and a generous amount of fresh chopped parsley or cilantro. Enjoy your delicious, homemade Chipotle Honey Chicken Skewers!
Leftover Instructions
Store any leftover chipotle honey chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop until warmed through, and enjoy with your favorite side dish.

Stove Top Grilling: No Grill? No Problem!
Even if you don’t have access to an outdoor grill, you can still enjoy these amazing chipotle honey chicken kabobs! The stove-top method yields equally delicious results, offering a fantastic way to enjoy this recipe year-round. You’ll follow the same initial prep and marinade instructions as for outdoor grilling; the only difference is how you cook them.
Once your chicken is marinated and beautifully threaded onto the skewers, place a large grill pan or a heavy-bottomed cast iron skillet on your stove top. Turn the burners to medium to medium-high heat. Allow the pan to heat up thoroughly for a few minutes until it’s very hot – this is crucial for getting those desirable char marks. Lightly spray your hot pan with cooking spray (or add a tablespoon of olive oil), then carefully add your chicken kabobs. Cook them for 3-5 minutes per side, rotating until all sides are nicely browned and the chicken is cooked through. Note that cooking times can vary depending on your specific stove and pan, so always use an instant-read meat thermometer to ensure the internal temperature of the thickest part of the chicken reaches a safe 165 degrees F (74°C). This indoor method provides a convenient and delicious alternative to outdoor grilling!
Meal Prep Master
You can easily cook a large amount of these chipotle honey chicken skewers and store them in airtight containers to be rewarmed and enjoyed all week for healthy, flavorful lunches. Some fantastic pairing ideas for this chicken include fluffy brown rice, protein-rich quinoa, couscous, or a vibrant medley of roasted vegetables, such as balsamic asparagus, bell peppers, or zucchini. For a lighter option, serve them alongside a crisp Caesar salad or a fresh garden salad.

Pro Tips for Flavorful & Juicy Chicken Skewers
Achieving perfectly tender and flavorful chicken skewers is easy with a few expert tips:
Marinade for Maximum Flavor: I highly recommend marinating this chicken for at least 20 minutes to allow the flavors to meld and penetrate the meat. Ideally, aim for 2-4 hours for a more intense flavor experience. The longer the chicken marinades, the more robust the taste will be! However, if time is of the essence, even 20 minutes will make a noticeable difference. You can also marinade the chicken overnight for ultimate convenience, but with one important modification: leave the fresh lime juice out of the marinade until just before grilling. The acidity in the lime juice can start to “cook” or denature the chicken if left too long, potentially leading to a slightly tougher texture. Simply add the lime juice and give it a quick toss right before you’re ready to grill.
High Heat for the Perfect Sear: When grilling, try to get your grill to a high temperature, ideally over 400 degrees F (200°C), and no lower than 375 degrees F (190°C). Chicken kabobs don’t take very long to cook through, so starting with high heat is crucial. This initial burst of intense heat helps to quickly sear the outside of the chicken, creating a delicious char and locking in the juices. This results in beautifully moist and tender chicken on the inside with a desirable crispy, caramelized exterior. Don’t be afraid to let the grill get nice and hot!
Don’t Overcrowd Skewers: When threading your chicken onto the skewers, ensure you don’t pack the pieces too tightly. Leave a little bit of space between each cube. This allows the heat to circulate evenly around all sides of the chicken, promoting uniform cooking and better charring. Overcrowded skewers can lead to steaming rather than grilling, resulting in less flavorful and less attractive results.
Rest Your Meat: After grilling, it’s tempting to dive right in, but letting your chicken rest for 5-10 minutes off the heat is a game-changer. This allows the juices, which have been pushed to the center of the meat during cooking, to redistribute throughout the chicken, ensuring every bite is incredibly juicy and tender. Simply transfer the skewers to a clean cutting board or plate, cover loosely with foil, and let them sit before serving.

Frequently Asked Questions (FAQS)
While I personally prefer the convenience of metal skewers (no soaking required!), if you opt for bamboo skewers, planning ahead is essential. You will need to soak them in water for at least 30 minutes before grilling, and preferably overnight. Soaking prevents the skewers from burning and charring too quickly on the hot grill, which can make it difficult to remove the cooked chicken. I haven’t found any negative effects from soaking them for extended periods; in fact, the longer they soak, the better they tend to hold up against the heat of the grill. So, feel free to soak them well!
To prepare chicken breasts for skewers, I recommend starting by cutting the chicken breast in half lengthwise if it’s particularly thick. If your breast is very large, you might even need to cut it into thirds lengthwise to create thinner strips. Next, take these strips and cut them into uniform 1 to 1 ½ inch cubes. The most important tip here is to try and keep all the cubes roughly the same size. This consistency is key to ensuring that all the chicken pieces cook at the same rate, preventing some from being undercooked while others are overcooked.
Absolutely, chicken kabobs are an excellent make-ahead option! You can marinate the chicken in a large bowl for up to 24 hours. Alternatively, you can marinate the chicken and then thread it onto skewers up to 12 hours ahead of time. When making ahead, store the marinated and/or skewered chicken covered in an airtight container in the refrigerator until you’re ready to grill. It’s crucial to leave the lime juice out of the marinade if you plan to prep it overnight, as the acid from the lime can begin to “cook” or toughen the chicken over such a long period. Just add the lime juice right before you start grilling for the best results.
Yes, this recipe is wonderfully freezer-friendly! To freeze, place the cubed chicken along with all the marinade ingredients (except for the fresh lime juice, for the same reason mentioned above) into a large freezer-safe bag. Press out any excess air and seal the bag, then lay it flat in your freezer for easy storage. It can be stored for up to 3 months. When you’re ready to cook, simply transfer the bag to the refrigerator and let the chicken thaw overnight. Once thawed, add the lime juice, toss, then thread onto skewers and grill as per the instructions.
Yes, absolutely! Adding vegetables to your skewers is a fantastic way to boost flavor, color, and nutrition. Bell peppers (any color), red onion, zucchini, cherry tomatoes, and pineapple chunks are all excellent choices that grill well and complement the chipotle honey flavors. If you’re using softer vegetables like tomatoes, add them to separate skewers or near the end of cooking to prevent them from overcooking and falling off.
The most reliable way to ensure your chicken is fully cooked and safe to eat is by using an instant-read meat thermometer. Insert the thermometer into the thickest part of a chicken piece (avoiding the skewer itself). The chicken is safely cooked when it reaches an internal temperature of 165°F (74°C). If you don’t have a thermometer, you can cut into a piece; the juices should run clear, and the meat should be opaque white throughout, with no pink remaining.
Serving Suggestions
These versatile Chipotle Honey Chicken Skewers pair beautifully with a variety of sides, making them perfect for any meal. Serve them with fluffy rice (white or brown), quinoa, or couscous. For a lighter meal, a fresh garden salad, a zesty corn salad, or a simple side of grilled vegetables like bell peppers and onions would be excellent. You can also get creative and serve the chicken in warm tortillas for delicious tacos, or as the protein base for vibrant rice bowls.

Notes
Marinade Time: I recommend marinating the chicken for at least 20 minutes to help develop more flavor. If marinating overnight be sure to leave out the lime juice from the marinade as the acid will begin to cook the chicken. Just add some in before grilling.
Freezer Instructions: Just like with marinating leave the lime juice out of you are freezing the chicken ahead of time. Add everything to a large freezer bag and store flat for up to 3 months. Thaw overnight, add lime juice then skewer and grill the kabobs when ready.
High Heat: Try and get your grill to a high temperature (go for over 400 degrees F) and no lower than 375 degrees F. When grilling the chicken kabobs they will not take very long to cook through, so starting at high heat will develop a char on the outside of the chicken before the inside gets overcooked.
