As devoted cheese lovers, living in Wisconsin, a state renowned for its incredible dairy, our appreciation for quality cheese only continues to grow. For this vegetarian flatbread pizza recipe, I was keen to feature a local Wisconsin cheese, pairing it with classic favorites to achieve a perfect balance.

Our Irresistible Three-Cheese Combination!

Crucially, mozzarella boasts a wonderfully neutral, creamy flavor that acts as an ideal backdrop for a variety of toppings. This versatility means you can experiment with different ingredients without worrying about clashing flavors, and it pairs beautifully with other, more distinctive cheeses, allowing their unique profiles to shine through.

2. A Touch of Sweet Nutty Flavor: Edam

Secondly, I sought another semi-soft cheese that would offer a delightful contrast to mozzarella’s mildness, bringing a more pronounced flavor to the flatbread. My choice for this role is Edam cheese. For those unfamiliar, Edam is a semi-soft cheese known for its excellent melting qualities, making it perfectly suited for pizza. It contributes a distinctive sweet and nutty flavor profile that I find complements the earthy notes of the sautéed mushrooms beautifully. Edam is also a relatively easy cheese to source, often found at local supermarkets like Aldi, which makes it both affordable and convenient for everyday cooking. For this vegetarian flatbread pizza, I deliberately opted for simplicity, knowing that the combination of three distinct cheeses and flavorful toppings would already provide plenty of character. Therefore, I chose a straightforward yet incredibly flavorful olive oil and Parmesan cheese blend as the base for this flatbread. My goal was to keep the overall dish light and allow the fresh ingredients to truly shine. Using prepackaged naan bread as the crust further streamlines the process, ensuring a quick and easy preparation.

The beauty of this sauce lies in its minimal effort and maximum impact. To prepare it, I simply combine all the sauce ingredients in a medium bowl, give it a good stir until everything is well incorporated, and then brush it evenly onto the naan bread. That’s it! The ingredients are pantry staples, meaning I never have to add anything extra to my grocery list, making this recipe even more convenient. The spices I use are oregano, garlic, ground black pepper, and red pepper flakes. The fresh garlic provides a prominent, aromatic foundation, while the other spices act as complementary notes, enhancing the overall flavor without overwhelming it. If you prefer less heat, you can easily omit the red pepper flakes from the sauce and instead sprinkle them on top of the finished pizza for an optional kick. For those who enjoy a more classic red sauce, my Perfect Marinara Sauce is always a fantastic alternative, though this flatbread truly sings with the light, herb-infused olive oil base.

What’s the absolute best part of a pizza? For many, it’s undoubtedly the toppings! While fresh cherry or grape tomatoes are certainly an option, sun-dried tomatoes deliver an intensified flavor profile that fresh tomatoes simply can’t match. I personally prefer the jarred variety, usually packed in oil, as they are consistently easy to find at my local grocery store and require minimal preparation. However, if dried sun-dried tomatoes are more convenient for you, they can be rehydrated or used directly, depending on the desired texture.

Finally, the crowning glory of this vegetarian flatbread pizza is the fresh rosemary. Rosemary is one of my absolute favorite herbs, and I’m fortunate enough to grow it year-round. This means I always have a fresh supply readily available, and I genuinely believe fresh rosemary makes a tremendous difference compared to its dried counterpart. If dried rosemary is all you have on hand, it will certainly work, but I highly recommend seeking out fresh sprigs. You can typically find it in the produce section of your grocery store, often near bagged lettuces and other fresh herbs. For the green-thumbed among us, consider planting your own rosemary plant; it’s incredibly rewarding and ensures a constant supply of this aromatic herb.

Ingredients

  

  • 4 Pieces Prepackaged Naan Bread
  • 1 tablespoon Unsalted Butter
  • 1 Cup Shitake Mushrooms Sliced
  • Cup Sundried Tomatoes Roughly Chopped
  • 1 Cup Mozzarella Cheese
  • ½ Cup Edam Cheese
  • ½ Cup White Cheddar Cheese
  • Cup Olive Oil
  • 2 tablespoon Grated Parmesan Cheese
  • ¼ teaspoon Red Pepper Flakes
  • ¼ teaspoon Ground Black Pepper
  • 1 teaspoon Oregano
  • 3 Cloves Garlic Minced
  • 2 tablespoon Fresh Rosemary Roughly Chopped

Optional Toppings

  • Fresh Rosemary
  • Red Pepper Flakes
  • Grated Parmesan Cheese

Instructions

 

  • Preheat the oven to 375 degrees. While the oven is preheating, add 1 tablespoon of unsalted butter to a small skillet and bring to medium heat. Once warm add the sliced shiitake mushrooms to the skillet and stir to coat with butter. Cook on low heat for about 10 minutes, stirring occasionally, until mushrooms begin to shrink and brown in color. 
  • While the mushrooms are browning prepare the olive oil sauce. Combine remaining olive oil, grated Parmesan cheese, minced garlic, red pepper flakes, ground black pepper and oregano into a small bowl. Stir until well combined. Brush olive oil mixture evenly onto prepackaged naan bread slices until none remains. 
  • Grate the white cheddar and Edam cheeses into small pieces. Add equal parts to each naan bread slice over the olive oil mixture. You can add more or less depending on your preference. Sprinkle shredded or fresh mozzarella cheese over top getting a nice combination all over each flatbread. 
  • By now the mushrooms should be nearing completion. Add an even amount to each flatbread. Add chopped sun-dried tomatoes* throughout each flatbread into any gaps of toppings. Finally sprinkle chopped fresh rosemary all over each flatbread pizza.  
  • Place flatbreads on a pizza stone or parchment paper lined cookie sheet and place in the oven for about 10 minutes or until cheese is melted. Serve warm and top with additional rosemary, red pepper flakes or Parmesan cheese. Enjoy!
