These honey roasted carrots are a healthy veggie side dish with the perfect balance of subtly sweet and comfortingly savory, cooked quickly and easily in your air fryer for a tender, crispy finish!

  • 1 pound carrots


  • 1 tablespoon olive oil


  • 1 tablespoon honey


  • 2 teaspoons dried thyme


  • 1 teaspoon salt


  • fresh parsley, for garnish (optional)

Instructions

 

  • Rinse, peel (if desired), and cut the carrots into quarters lengthwise. For even cooking, ensure pieces are uniform in size (approx. 3-4 inches long and ½ inch thick). Place them into a large mixing bowl.

  • Add the olive oil, honey, thyme, and salt to the bowl. Toss thoroughly to ensure every carrot piece is evenly coated with the seasoning mixture.

  • Preheat your air fryer to 380 degrees F (190°C) for 3-5 minutes (optional but recommended). Place the seasoned carrots into the air fryer basket in a single layer, making sure not to overcrowd. Air fry for 10 minutes, then shake the basket or toss the carrots with tongs, and continue cooking for another 10 minutes, or until tender-crisp and caramelized.
  • If desired, serve immediately, garnished with fresh chopped parsley and an optional extra drizzle of honey for added sweetness.

Notes

  • You can substitute maple syrup for honey for a slightly different sweet flavor.
  • Use baby carrots for even faster prep – no need to wash, peel, or chop!
  • For even cooking and crispiness, do not overload the air fryer basket. Cook in two batches if needed to ensure proper air circulation.
  • Pat carrots thoroughly dry before seasoning to achieve the best crispy texture.
  • Cooking times may vary based on your specific air fryer model and the thickness of your carrot pieces. Always monitor closely during the last few minutes.
