  • Add the shrimp, and simmer about 5-10 minutes, stirring occasionally, until the shrimp are done.

  • Spice Level Caution: Always be mindful of the amount of crushed red pepper flakes you add. It’s best to start conservatively if you’re unsure of your spice tolerance or the heat level of your flakes. You can always taste and add more later to dial up the heat to your preference!
  • Shrimp Preparation: For convenience, I typically opt for shrimp that are at least peeled and deveined. However, finding tail-off shrimp isn’t always easy. If your shrimp have tails and you wish to remove them, thaw them first. Place frozen shrimp in a ziplock bag, squeeze out the air, and run under cool water until thawed. The tails can then be easily removed.
  • Cooking Frozen Tail-Off Shrimp: If you’re fortunate enough to find peeled, deveined, and tail-off shrimp, you can simply toss them directly into the simmering tomato mixture from the bag. No need for thawing, as they will cook perfectly in the hot liquid.
  • Avoid Overcooking! This cannot be stressed enough. Shrimp cook very quickly. They are perfectly done when they turn uniformly pink and opaque, forming a gentle “C” shape. If they curl too tightly into an “O” shape, they are overcooked and will have a rubbery texture.
